Tried and True Friday-Pickled Noodles

Okay, the same does seem a little strange but let me tell you this good.  I think this falls under healthy and easy to make as well.

Pickled Noodles

  • 1 pound rigatoni (I used the tri-colored ones)
  • 2 cups sugar
  • 1 tsp. pepper
  • 2 tsps. prepared mustard
  • 1 tbsp salt
  • 2 1/2 cups cider vinegar
  • 1 tsp. garlic powder
  • 1 finely chopped onion
  • 1 finely chopped unpeeled cucumber
  • 1 tsp jarred minced garlic

Cook pasta according to directions on package.  Drain well and rinse with cold water.  Drain again.  In saucepan, combine sugar, pepper, mustard, salt, vinegar, and garlic powder and heat until sugar dissolves.  Put pasta in large bowl.  Add onion, cucumber, and garlic to pasta.  Pour dressing over mixture and toss.  Cover and refrigerate at least 24 hours.
