Well fall is in the air and where I live that can mean only one thing-Apple Harvest Time. During the first two weekends in October there is a huge festival at a local fairgrounddedicated to Apple Harvest. You can find all sorts of things there from fresh scrapple to watching apple cider being made and more apple products and country crafts than you can shake a stick out. Why am I telling you all this? Because it is with all of this in mind that lead me to decide on this week’s recipe-Apple Crisp.
- apples (amount will vary based on size of apples)
- 1/2 cup oil
- 1 egg
- 1 cup flour
- 1 cup sugar
- 1/2 tsp. salt
- 1 tsp baking powder
Slice apples in the bottom of a buttered 9 x 13 dish; dot with butter, brown sugar and cinnamon (the brown sugar and cinnamon are to taste). Beat together oil and egg until light colored. Mix together flour, sugar, salt, and baking powder. Combine with egg/oil mixture using a fork. Spread over apples-this will not be a solid covering, just make sure you have it spread well. Bake at 350 for 35 minutes. This is very quick, easy, and best of all, good! Maybe you don’t like apples, well this would also work well with fresh peaches or cherry pie filling.
