Asian Beef and Noodle Toss

Okay it’s been awhile since a I posted a recipe and after trying this one I thought I should share it.  I found this on First Place 4 Health.  It’s super easy and pretty quick.

Here’s the recipe (straight from First place 4 health) :

    • 1 pound lean ground beef
    • 2 packages Oriental-flavor instant ramen noodles (3 oz. packages)
    • 2 cups water
    • 2 cups frozen Oriental vegetable mixture
    • 1/8 teaspoon ground ginger
    • 2 Tablespoons green onion, thinly sliced

In large nonstick skillet, brown ground beef over medium heat for 8 to 10 minutes or until beef is no longer pink, breaking up into 3/4-inch crumbles. Remove with slotted spoon; pour off drippings. Season beef with one seasoning packet from noodles; set aside.
In same skillet, combine water, vegetables, noodles (broken into several pieces), ginger and remaining seasoning packet. Bring to a boil; reduce heat. Cover, simmer 3 minutes or until noodles are tender, stirring occasionally. Return beef to skillet; heat through. Stir in green onion before serving.

Here’s how it looked:

Now I didn’t have any green onion to add but it still tasted great.  Now for a quick cost check.

  • 1lb ground hamburger- 1.88
  • 2 packages of ramen-.42
  • 1-160z package of oriental vegetables- 1.59
  • ground ginger- .10

Cost for a serving of 4 comes to 3.99 so even if you need to double it (which I would if I was feeding more than just the kids) it still comes in at about $8 which isn’t too shabby for a family of 8.  As I said thought this was quick and easy and I would definately make it again.
